The Hidden Blade in AC1. Why? Cause it was the most fun in that. Especially when finishing off a downed enemy. AC3 one was horrendous and the Ezio trilogy ones were good since they had armour and dual kills, but they didn't pack the "epic" that AC1 had. Dual kills were still fun though. A combination of AC2 or rather ACB mechanics mixed in with the awesome animations of AC3 would have been the best thing ever but..... sadly.... that was not the case.

None-the-less the high profile dual hidden blade kills in AC3 never get old so it wins in whichever way.
