Historically you are correct about the Hashashins but in the AC universe it is different, which is what makes the series so great. I mean it is so well written that it is almost believable. Also I understand what you mean about the Templars but if you remember Altair's conversations with Al Mualim, you can see where they started to go wrong with their idealology (which is further proven in their actions in the following games.)
