I can definitely think of a few features to include. As opposed to say Altair's, or Brutus armor. Could have the top armor being that of Hugues de Payens. The founder of the actual Order who happened to be French. And to toss in another bit of history that's surrounded in rumor, the Templar treasure was never found and it was said to be a vast large amount. As it didn't seem like in Ezio's time that they still had it perhaps something involving this.
