Haytham, because he's fun to be around. Just for fun, here's why I didn't pick anyone else: Al would be too busy being stoic, Ezio would be too busy chasing after some chick/revenge/wisdom or whatever, Connor's a bore (to hang out with at least), Edward would steal all my monehz and Desmond would end up wasted because of drinking too many Shirley Templars combined with the Bleeding Effect. Aveline? Yeah, I think I'll pass on having to deal with a very jealous person afterwards xD
