Well, two simple reasons.
1 The protagonists of all previous main Assassin's Creeds have been male (Altaïr, Ezio, Connor and Edward). Bit boring, don't you think? Especially since there is a good deal of supporting characters that are both female and and Assassin (Lucy... sort of, Rebecca, Maria Thorpe, Claudia and Maria Auditore, Caterina Sforza, Sofia Sartor, Anne Bonny, Mary Read).
2 Don't forget that there are significant physical differences between females and males. If we're being realistic, then there would be a significant difference in gameplay every time. Some might experience that as annoying, and would tend to only use one of the personas. I'm trying to avoid that; while both current personas have their differences related to combat, they handle mostly the same.
But I presume you saw why I chose for two female personas before this short explanation? ;-)
