The Animus makes Ezio and Altaïr look like Desmond but when they really lived they would look nothing like him. That's why Altaïr doesn't look like Desmond in Assassin's Creed Revelations because Ezio is reliving Altaïr's life via Altaïr's seals unlike normal where Desmond is reliving their lives via the Animus. So freakin' complicated I know XD
