There are only two possible ways that we'll get to watch Ezio die. Number 1, if his child (Desmond's Ancestor) is present at Ezio's deathbed. Number 2, if he died from a heart attack or something similar from conceiving his child. Number 2, not likely. Number 1, also unlikely.
