I think Ezio didn't know where to find Cesare until 1507 in Spain, (possibly because when he asked the Apple for his location he wasn't specific enough about a time period)but i agree that a bit of Ezio hunting around and interrogating his Sister and other Borgia/Templars would still have been a good addition. I guess they had to cut that time out though to make the game flow better..
