I think there's a small, but important distinction to be made here: how often do the Assassins hurt a target's family to get what they want? That certainly happened with Abbas and Sergei, but no other situations come to mind. Meanwhile, many of the high-up Templars we've seen have done it. Rodrigo Borgia had Giovanni's family killed; Cesere slaughtered anyone he wanted; Ahmet tried to have Sophia executed; Charles Lee swore to murder all the Homesteaders and Connor's people; Torres and company collectively threatened Caroline; and Vidic took William hostage.

I feel this is an example of a sentiment more widely believed among Templars than the Assassins: you will agree with them, one way or the other.
