Maybe he saw Sofia had some Assassin traits in her and therefore imagined her in assassin robes. The Animus shows what the subject is going through right (what he is 'seeing')? What if this was some kind of 'real time memory'? Although the event never really happened, Callum envisioned it intensily, as if it were true.

It's the third time I see the movie and I can tell you that it's not his imagination and definitely it's not a memory or the bleeding effect. It's like a real time-space travel... Just look Callum's mom and dad! They interact with each other in the animus regression! Maybe our blood can store more than our ancestor's memories... that's creepy, amazing but creepy.
