From what I understand the Shroud that became known as the Shroud of Turin was never the one used by Jesus. The Shroud of Turin was actually the one used by Jason and then Brutus which came into the hands of Geoffrey de Charny before being stolen by the Italian assassins and finally recovered by Abstergo in the mid 1900s. It has never explained why the Shroud of Turin was thought to be the Hebrew Shroud in universe.
