I personally think it boils down to whether or not they're noteworthy in and of themselves. The robes worn by the protagonists are what most people recognize about them, to the point where they request the outfits to return in sequels.
There is also a matter of consistency, Altair and Ezio already had robes pages. Whereas later protagonists didn't. The best argument I've heard so far is that Altair and Ezio wore multiple robes, but that raises the question of why Edward and Shay, for example didn't get their own robes articles, and why the other protagonists who didn't switch robes shouldn't.
