I'm pretty sure that during Ezio's time, Mentor is a rank in between Master Assassin and the Grand Master or the Order, and works by saying that this Assassin has mentored a lot of Apprentices and is very skilled. By the Modern Times however, with the ability to communicate with the whole world, the Mentor position becomes merged with the Grand Master title.
