Pickpocketing is very vital thing in assassins creed and you can get various items such as throwing knives, to pick pocket press the "arm" when targeting the victim, get a few paces behind them and walk up to them and your hands will be extended, once close enough you will grab the victims bag and carried out a successful Pickpocket.

When not to Pickpocket:

There are various scenarios in which a pickpoket should not be attempted.

1)The Victim stops. 2)The victim is facing you. 3)The victim is looking behind him. 4)You are too close to the victim and he tells you to be gone. 5)A guard is very close.
