Charlotte Gouze (fl. 1790's) was a member of the French Brotherhood of Assassins and the manager of the Café Théâtre, an intelligence-gathering network of the Brotherhood in Paris. During the end of the 18th century, the Café Théâtre fell into near-ruin. In January 1791, Charlotte met the Assassin apprentice Arno Dorian who visited the Café. She gave him the stewardship of the building. During the following years, Arno renovated the Café while Charlotte gave him missions though the city.

During the French Revolution, a royalist crime gang, Les Actes des Apôtres, began to commit crimes in Paris. Charlotte sent Arno dealt with them. Charlotte recruited Colette, an informant who spied members of Les Actes des Apôtres, and the dressmaker Rose Bertin, to make the costumes of the Café Théâtre's actors. The two were targeted by Les Actes des Apôtres but Gouze sent Arno to save them.

Charlotte Gouze had a relationship with the fencing master of the Café and fellow Assassin, Augustin Grisier.
