The American Revolution can't really be thoroughly voted on because we only have a basic understanding of the time period for AC3 but other than that... I'd have to say the Renaissance is my favoriate time period. I enjoyed the Renaissance because I felt closer to my European heritage, (I'm Greek) I really enjoyed the architecture, (Though the architecture in AC1 was still amazing in all its glory) and I got to meet Leonardo Da Vinci.
