My first time watching the movie, I also thought that the unknown man was a Templar or Assassin who poison from revenge or as a contract. But when I did a few research on the event, and what i read is that he was of no importance but a self image of Ezio in his younger years, and that Ezio died from heart failures. Causes could have been from the explosion and burning cause by Ezio in Cappadocia. And also the Insignia is too hard to resemble the Templar Cross because of the shadow and blurring. It also looks like the Firenze logo. Its the same colour, and if you google an image of the Firenze logo and look at both of them closely, you might also see a resemblance and a more reasonable reason of the insignia in the image.
