It would have to be the Courtesans. I don't know much about Constantinople's history, but I don't think it had "Courtesans", they probably have some other word for them, or maybe none at all. Scholars could make a return though, replacing the Courtesans. They do basically the same thing, and I reckon Scholars would fit in with the culture a lot better too.
