Ok, after Ezio has the son that LEADS DIRECTLY to Desmond, is when he's going to not be able to control Ezio. The first game explains that genetic history is passed down. If it was a psychic or magical thing, then yes, we could continue with Altair. But no, the only reason we have his memories is because Desmond is part of the line that passed them down. And unless that line dug up altair's corpse and found a way to put his missing genetic history in them, it's impossible that was could have the rest. Let me put it this way: If the ancestor never had sex, he would never pass down any memories. So that means, that when he does have sex, he's passing down everything he's experienced up until that point. Would it make sense for him to pass down memories he hasn't had yet? No.
