I think you should also pick up AC1.

It might have it's issues, but it is the start of the series, and also, as Slate said, the Templars are very different in AC1. It can prepare you better in that department for ACIII, plus, it shows how the series evolved.

Trust me, the gap between AC1 to ACII is BIG. It is fun in itself seeing how much has changed.

The game itself is solid, too.
