My personal choices would be:

AC 4: France, 9th - 11th century, struggle for power.

AC 5: China, 13th –16th century, Ming Dynasty.

AC 6: England,18th - 20th century, industrial era.

AC 7: Japan, 12th - 18th century, Fedual times.

I think AC will go possibly longer than this with more games (AC 4.5,AC 6.5) it could go on for incredibly long their is so much to explore and so much to uncover. I hope it never ends.
