the assassins were as real as the templars. i think youve not understood fully, neither are actually good or evil, the terms are only an opinion of morality. the assassins dont want anarchy and the templars would achieve order by removing will, the creed isnt to be taken so literaly, ezio described it as an observation of the world rather than a doctrine to follow.
