Well Altair was a person of Knowledge. He reads lots of books and even when Al Mualim was giving Altair answers he still wanted to know more. Even Niccolo in the Assassin's Creed Secret Crusade novel said Altair story is about Knowledge when he was telling it to Maffeo.

Ezio showed lots of emotion for an Assassin. In the last sequence in AC2 he even tried to kill Rodrigo with hatred. When he saw the apple in the lasy sequence in Revelations he left it because he wanted a calm life with Sofia. In Embers he even talks about love showing love for cultures etc.
