Ubisoft, as a company, have never said they 'have no interest in making an Assassin's Creed game in Japan'. It's the opinions of a few devs - Alex Hutchinson among others. It's not up to one individual or a select few to decide where the series is going next, so Feudal Japan is as possible as any setting.

And given that those devs' main reason for not wanting Feudal Japan is the amount of games that already feature the setting (most of which are Japanese games, which barely respect history - think Giant Enemy Crab). And now that we have had a game based around pirates, which many games have already one before, I don't think that argument holds much merit anymore.
