In the Altaïr's time all assassins with a hood had a beak.
In Ezio's time only people who people they recruited started without a beak and when they become an assassin then they gott a beaked hood.
In Connor's time it's a bit mixed. He got a beaked hood when he become an assassin but not his recruits did not. They didn't even gett an outfit.
In Edward's time we don't know how it workes.
