I do not remember Brotherhood having 5+ studios working on it. As I recall, Brotherhood had Montreal and Annecy producing it, both of them focusing on SP and MP production respectively.

One thing that worries me is that if AC3 really has been produced for 3 years, while ACB and ACR were being produced as well, how much will it be impacted by the development taken away from it for those two games? People are getting excited at the prospect that it has had a long time to be made, but if for 2 years progress has been slow, is it really ideal to get excited about how much it has been developed for, when it could end up having 1.5 to 2 years worth of focus?

(Edit: As it turns out, I was wrong. ACB was made by 5 studios. Can't say I remember it being advertised as such though.)
