Edit: Going on what Maxattac mentioned, there are many influential Assassins that we know of but there isn't a story behind the name, i.e. Ishak Pasha. But that being said, I would like the non-canon storylines reintroduced in a canon format, because it does seem such a waste to have these characters and then have to slap a big "these people aren't even vital to the main storyline" sign over them due to the nature of the published format. Aquilus, Accipter, Cuervo, El Cakr being examples of this.
There are even more useful subjects to use such as Giovanni Borgia, the unknown British medic during WWI, and given that Shao Jun was shown during the Helix "selection" screen in Unity, it's very much possible that the unknown Irish, American and other Assassins on that may get introduced if the Chronicles trilogy does well financially.

I would certainly like to see more Chronicles games provided that they give the same sort of character development as they did with Shao Jun, because the main protagonists have been somewhat stale recently. Ubi promise a convincing tale but haven't been delivering quite as much as they state, unlike in these short narrative tales.

I would entertain the concept of an Ancient Egyptian story featuring Amunet, which would not exactly rule out later dynasties and could possibly elaborate more on the mythology surrounding the First Civilization.

Also, though I know it was elaborated on somewhat in Memories, seeing the life of Nergui during the Crusade of Ghengis Khan, and/or after Qulan Gal's passing, would give us another brief foray into a Central/East Asian setting.
