You may find that the fighting style in Assassin's Creed looks very unique and different from other martial arts. It seems that many question about the martial arts used in Assassin's creed. However, the games have no specific style of art that is mentioned, rather, the different ways and survival techniques to make the game interesting. The fighting style however, can be compared to different styles of martial arts. Take for example, Kali/Eskrima/Arnis which is used in the movies Blade, The Book of Eli, Sucker Punch, Ninja Assassin and all the Bourne movies.

Kali movements almost resemble the fighting of Assassin's Creed because it is weapon based. We see that the main protagonist of Assassin's Creed 3 uses a dual wield style, Tomahawk and Dagger. This can also be compared to Kali as the art trains with sticks to replicate any type of weaponry (mainly bladed weapons).

Because the art is weapon based, it doesn't mean that it only uses weapons. In fact, the art believes that the whole body is a weapon therefore, every weapon move can be translated to empty hand techniques. The art includes eye gouging, ear ripping, and groin shots. Therefore, the art can be considered as dirty fighting. It has an emphasis on dodging, mobility and smooth flow. Not to mention, the art also focuses on abidexterity.

We see that Connor, Ezio and Altair don't put any emphasis on blocking. This is very similar to Kali as there is a philosophy that "The best defense is attack." You will find that a Kali practitioner strikes or enters the attack much like the AC protagonists. Instead of blocking then striking, they strike and block at the same time. When they block, it isn't a regular block but a parry.

While there is no official martial art stated for Assassin's creed, this is merely a comparison and an opinion.
