Pickpocketing is very vital thing in Assassin's Creed as you can get various items such as throwing knives from doing this. It is also the only way to re-stock Throwing Knives, apart from going to Masyaf.
How to Pick Pocket
To pick pocket press the right shoulder button. (the same button used to use high-profile moves) when targeting the victim, get a few paces behind them and walk up to them and your hands will be extended, once close enough you will grab the victims bag and carried out a successful Pickpocket.
