To contradict the comment on Altair's Armor, I have never witnessed a change to the armor itself at any time and condition.

Customization is a minor gameplay mechanic of Assassin's Creed II. In the Tailor shops in all of the cities, the player can dye Ezio's clothing, all though the possible color schemes depend on which city they are in. You can always switch back to your normal color, Assassin White, for free. You can unlock the achievement, "Perfect Harmony", by dyeing your clothes with both Wetlands Ebony and Wetlands Ivory, both colors are available in Romagna/Forli.
