Now actually.. The American Revolution can be considered as one of the main triggers for the French Revolution and the Enlightment. These were one of the most important things in the history of the Western World as they are the reason for the democracy we have today. While the Borgias' impact on the rest of the world was rather small (besides showing the corruption of the church maybe and being a role model for other rulers), their history is set in the Renaissance. The Renaissance is today considered as one of the most important art epochs and was also responsible for many new developments in science as well as a new idea of man. Suleiman's story is set at the beginning of the Ottoman Empire. Suleiman was one of the biggest leaders in the history of mankind, enlarging his empire in a short amount of time and also being a man of art, architecture and culture. Don't forget that the Ottoman Empire existed even after WWI. The Third Crusade (as well as the other Crusades, of course) were one of the biggest conquest attempts during the Middle Ages. Countless people died during that time, most of them for their belief. As such, it was one of the first clashes between Christian and Muslim societies and it was probably only thanks to Saladin that the Christians did not manage to conquer the whole Holy Land. Imagine how history would've been like, if Christianity established such a huge empire that early...
tl;dr: All of the events featured in Assassin's Creed actually had a huge impact on history and are responsible for the world we know today.
