I think Ezio's outfit from AC2 was designed to blend in with the crowd; without any armor, it resembled a member of the nobility. ACB was a bit like Altair; he is focused more on the assassin cause only, and not as much about blending (it is still important though). His suit is also simpler since he must carry more weapons.
