Actually, humans and hylians are different in Twilight Princess (even though, Link is referred to as a human). Hylians have pointed ears, whereas humans do not. I think humans are also a little taller and beefier, but I'm not sure.

The reason this is so is because TP takes place at the end of the Zelda Timeline according to Hyrule Historia (which is the offical lore book and an artbook for the 25th anniversary of Zelda). I looked at the Zelda Wikia, and it appears that the hylian race thinned out over the years.

According to legend (and A Link to the Past's instruction manual) when the three goddesses made Hyrule, they gave the hylians pointed ears so that they could hear them speaking.

That's why it's mentioned in Chapter 3 when Ezio doesn't have pointed ears (granted, the children don't either) that he can't hear the goddesses.
