The reason why the games that feature Ezio have "funny" moments is to contrast with Altair's focus on his duty as opposed to Ezio's charm.

You also have to take into account that there wasn't much to be happy about in the Holy Land in 1911.

Altair was not sinister however, he just hailed from a time where war was more apparant.
