I think a game set on the home front (in either world war) would work pefectly. It's an Assassin's Creed game; it doesn't have to take place on the front lines. Also a home front game would have potential for including air raids into the story (just imagine the terror of hearing an alarm sound before seeing a zeppelin or air squadron fly overhead).

Also, it doesn't have to take place exclusively during war. There was plenty of intrigue and exciting events both before and after both world wars (various crises in Europe and Africa, hyperinflation in Germany, revolutions accross Europe, start of the cold war, and many, many more...) That said, it would be hard to make an Assassin's Creed game in the 20th century; parkour and knife/sword fighting just wouldn't feel right in this time period.
