Tailors are merchants who upgrade Ezio's pouches, allowing him to carry more Medicine, Poison, Throwing Knives, Crossbow Bolts and Parachutes. They can also dye Ezio's clothes with various colors specific to the city or district they are located in.
Assassin's Creed II

Upgrading Pouches increases Ezio's carrying capacity of a certain item by 5. Generally, it is required to purchase a lower priced Pouch upgrade in order to access the higher priced ones. However, the Large Medicine Pouch can be purchased for 6000 florins (and upgrade capacity directly to 15) without purchasing the Medium Pouch for 3000 florins (which only upgrades capacity to 10).

Assassin's Creed: Brotherhood

The tailors return in Assassin's Creed: Brotherhood, and are stocked with the original upgrades and dyes, as well as some new ones. However, Ezio's cape may now be dyed separately to the rest of his robes.
In addition, tailors can sell Ezio parachutes after he has destroyed all of Leonardo da Vinci's war machines. Different dyes are sold in each of the three main districts.
Two additional items are also sold only at tailors. Smoke bombs are made available by purchasing the smoke bomb pouch, and the Heavy Sheath allows Ezio to carry Heavy weapons as primary weapons.
