ACIV was a better contender, there was more passion involved in its development and overall conception... ACIII felt like they wanted to give the fans something to awe at, for maybe, the first month and a half, but then we soon find out how little of ACIII is actually a far leap into the abyss of... improvement.  ACII was definitely the greatest epitome of what Assassin's Creed can become.  Brotherhood and Revelations expanded on AC2's concept and added some more new things.  Overall, I miss the passion involved in making Assassin's Creed.
