Tailors are merchants who upgrade Ezio's pouches, allowing him to carry more Medicine, Poison, Throwing Knives, Crossbow Bolts and Parachutes. They can also dye Ezio's clothes with various colors specific to the city/district you are in.
Assassin's Creed II
Upgrading your Pouches increases Ezio's carrying capacity of a certain item by 5. It is required to upgrade to a lower priced upgrade in order to access the higher priced ones, this however, is not true for the Medicine Pouch. You can purchase the Large Pouch for 6000 florins and have your capacity upgraded to 15 without purchasing the Medium Pouch for 3000, a way to save some florins.

Dye Colors available change depending on what region the Tailor is located in. You can get
an achievement "Perfect Harmony" by dyeing Ezio's clothes with Wetland Ebony and Wetland Ivory. Dye prices in Monteriggioni change depending on how well you've renovated the Tailor's shop.

Assassin's Creed: Brotherhood

The tailors return in Assassin's Creed: Brotherhood, having the original upgrades and dyes, as well as some new ones. In addition, tailors can sell Ezio parachutes after he has destroyed all of Leonardo da Vinci's war machines. Just like Assassin's Creed II, different dyes are sold in different areas, specifically the three main districts. Ezio can now also dye his cape, a new option in Brotherhood.
Smoke bombs are unavailable unless Ezio buy a Smoke bomb pouch in a tailor. Also, Ezio can buy the Heavy Sheath, allowing him to carry Heavy weapons as primary weapons.
