I vote Altair, because, in my eyes, he was the one who took his Assassin role the most seriously. Though he was a bit of a hothead in his youth, as he grew older he learned from his mistakes, gained more knowledge from his experiences, and developed into a legendary Master Assassin. He also mastered the use of dual hidden blades (which I personally feel is becoming an overused gameplay trait of recent AC games) created the Codex pages that detail various assassination techniques, created the hidden gun, and an indestructible set of armor.
