I think the choice to include this is because it's something that makes these characters different from the majority without being unusually broad. We could equally have a category for characters with only one eye or characters that specialize in computers and hacking.
It's a characteristic not shared with a majority, not one that we are passing a judgement on or using to devalue the characters. Male/female is too broad because it would cover close to a majority, as would heterosexual.
It has some utility in that LGBT/Q rights are a political issue today, and having the category can be used to reference different factions' and the franchise's inclusiveness and representation of those same issues.
I do think that, since this is an issue that may recur, we should open a forum to establish criteria for new categories, levels of specificity or generality needed, and minimum membership counts. All current categories can then be reconsidered based on a community consensus on criteria.
