Merchants are citizens that sell and buy things on the towns.

The role of merchants in Assassin's Creed is simply to provide atmosphere with no interaction to buy or sell items (the idea of banking was not around during the 1100s). However, they make for a handy "escape" option if you dive through them to avoid running into citizens. In the PC version, there are also secondary missions in which you must destroy a set number of market tends before the timer runs out.
Assassin's Creed II
On AC2, the role of merchants is much improved. Aside from the mentioned above, the player can now buy stuff from them, ranging from weapons to armor.
