They use the same NPC models as Italians from ACII/B. Which is why i'm assuming they're Italian, because they definitely do not look like any Turks I know. And my country was invaded by the Ottomans a few centuries back. Oh, and they would probably be drinking coffee instead of tea, because Turks pretty much created coffee.
