The Grand Master is the highest rank in the Assassins order. It is the most important rank and grants full command of the brotherhood.
At the end of Altair's quest, he killed Al Mualim and took on the role of Grand Master of the Assassins. Al Mualim was a Templar and wanted the 9 most powerful Templars dead because he wanted the Piece of Eden to ensure absolute peace in the world, as he says to Altair in his dying words.
Altair was drawn to the Apple aswell, as can be read in the Codex Pages he wrote, in one of the pages he made an armour that was lighter than a feather but stronger than the feather itself, Altair erased the context of the page but left a picture to show how well he did this so the Templars couldn't replicate it.
