That's exactly the point. It's the player's choice, Ezio didn't make it. For all we know, he could not have even been detected by the guards.
EDIT: One more thing. Connor broke the 2nd tenent. Hide in Plain Sight. He doesn't even hide.. He just runs up to them and tomahawks them in the face.
