Well actually, "Non nobis Domine, non nobis, sed Nomini Tuo da Gloriam" is the entire phrase which is the motto of the Templars. It means: "Not to us God, not to us, but to Your Name give Glory". Al Mualim only says the first part "Non nobis Domine, non nobis..." to answer Altaïr's question: what is the link between his targets. I think it's after killing Abul Nuqud or William of Montferrat.
