Pickpocketing is very vital thing in assassins creed and you can get various items such as throwing knives, to pick pocket press the "arm" when targeting the victim, get a few paces behind them and walk up to them and your hands will be extended, once close enough you will grab the victims bag and carried out a successful Pickpocket.
