If there was any information other than his location to suggest he was Greek, perhaps. ATM, however, we can logically no more assert he was Greek than we can assert that Tarik Barleti, Sofia or Ezio are Turkish because they were in Constantinople.

Castor (unknown – c. 1512) was a Master Assassin in Rhodes, who was killed by the Knights Hospitalier. In revenge, a group of Ottoman Assassins were sent by Ezio Auditore from his base in Constantinople, in order to destroy the Hospitalier compound in the city.
