I think the voices during the credits simply provide a convenient reason why we are able to continue playing as Ezio after beating the game.
They are probably another team of modern Assassins who have reunited with Desmond and crew. AC3 might open with these new assassins bringing Desmond, Lucy, Sean, and Rebecca to a new safe location, (maybe) saving Lucy, and putting Desmond back into the Animus to finish the search with one last new ancestor. When the Animus missions are complete, we'll probably see a small army of present-day Assassins helping Desmond secure the remaining pieces of Eden, or even following Desmond as they bring the fight to the Templars once and for all.
By not including those voices in the credits, it would have created a plot hole as to how we are able to continue being in the Animus, seeing how Desmond is unconscious and the team is under the Colosseum without an Animus. I sincerely hope that Desmond is not another ancestor. That would be pretty lame. The story begins with Desmond, and it should end with him as well.
One last thought and I'll stop. A lot of long stories begin with a group of good guys vs. a group of bad guys, then towards the end, a new greater enemy is introduced, and good and bad guys have to team up to fight the greater evil. I am curious to see if they go this route... Assassins and Templars vs. Those Who Came Before? Off topic, I also see this happening in Mass Effect 3 (Cerberus and Alliance vs. Reapers).
All in all, I am hoping for an awesome experience with AC3 that keeps me wondering til the end without pulling any lame trick at the last moment that ruins everything. I want to feel like the trilogy really comes together for an epic tale, and I want to be blown away by the last 10 minutes. The epicness of a "secret world history" deserves an equally epic finale.
