The Templar were not against Democracy or "freedom".

Templars are against Free Will. a lack of direction. a invitation to chaos. During Sun time.You can totally make the argument that China needed some direction from the Templar order.

I for one welcome a Templar that isn't an egotist that's bent on absolute power. Sun Yat-sen Templar order make senses for a Order that's weak. It mention in the comic that there were gangs and warlords throughout china. This tell me that the Templar didn't have control over the late Qing dynasty. And the way i would explain the Chinese Assassin killing Sun is exemplify by Pierre Bellec (from AC Unity). The mindset that the Assassins and Templar can never get along. Not to mention we don't know who's the previous Chinese Grand Master.
Also often the death of moderate Templar and Assassin leads to the extremist coming to power. Thus explaining Chang and Mao in the following years. and vise versa
